The grapes are carefully selected from the hillsides in the Marano valley. The clusters were rigorously graded when hand-picked, with Giuseppe Campagnola selecting the best lots on arrival. Natural and traditional drying of the grapes for 20 days with extreme care exercised to maintain clean, healthy grapes. In October, cool controlled temperature fermentation at 22°C, followed by a 15 day maceration on the skins in large oak barrels.
