Vinification: The individual parcels of grapes are harvested by hand and mechanically from vines ranging from 15 to 45 years in age. The final blend composes of 50% Grenache, 30% Syrah, 10% Mourvèdre, 5% Cinsault & 5% Carignan. At the winery, the grapes are completely stripped of stems and any leaves and pressed using a pneumatic press. The must is fermented in cement vats for 15 to 20 days at low, controlled temperatures. The wine stays in the cement vats for 12 to 18 months before bottling. The wine rests in the bottle for 6 months before release.
