The grapes are harvested when medium ripe in order to preserve the acidity component. Harvest usually takes place in September by hand. On arrival at the winery, the grapes are gently pressed. Then, a slow fermentation takes place in steel tanks with indigenous yeasts. After racking, the sparkling wine production (secondary fermentation) takes place. The sparkling wine is bottled around December.
