Bovale Sardo | Carignano | Monica
Primarily a wine made from indigenous Monica grapes with 10% Carignano and 5% Bovale Sardo. On arrival at the winery the grapes are gently crushed, destemmed and are fermented in tank for 10 to 15 days at 82-86F. The wine is then transferred to 225L French oak barriques for 12 months maturation. The wine is then aged in bottle for 6 months before release.
