Typical Tuscan Vin Santo uses Malvasia and Trebbiano, here Colombana too, local to this particular area of Tuscany is added for extra complexity.
The Badia di Morrona Vin Santo is produced faithfully according to tradition.
The grape bunches are left to dry on reed mats until February to maximise sugar levels as the grapes raisin.
The must them ferments and is then aged in 30 gallon barrels (feuillates) for a minimum of four years.
