Grape Varieties :
The Chardonnay grapes are manually harvested from the Vaiano vineyard 450m a.s.l in the famous 'Calanchi' hills. The grapes are picked at the end of August and placed in 25kg boxes.
On arrival at the winery the grapes are fermented in stainless steel vats at an average temperature 15°C. No malolactic fermentation occurs. The wine is stored 100% in steel vats for 8 months and refined in bottle for approx 3 months.
