70% Semillon and 30% Sauvignon Blanc. The grapes are manually collected in mid-September and placed into 25kg boxes from vineyards in Orvieto, 500 metres above sea level with partly clay, partly volcanic soil with medium to low fertility.
Fermentation takes place in steel vats at low temperatures. The wine ages here for 5 months before bottling.
