The single vineyard Verdicchio grapes are carefully handpicked in 2 phases to ensure only the best grapes are chosen. On arrival at the winery, the clusters are de-stemmed, and the juice is cryomacerated on the skins. The free-run must is separated out and gravity settled and the wine then undergoes a temperature controlled fermentation with cultured native yeasts.
The wines then matures 4 months 'sur lie' in steel, with regular battonage, then the wine bottle-ages in temperature controlled storage before release.
