Legend has it that in 1111 in the footsteps of Henry V, German Bishop, Johannes Defuk, travelled to Rome to receive his coronation from Pope Pasquale. As a lover of fine wine, the Bishop instructed his faithful servant Martino to travel ahead of him marking ‘Est’ (It is) in chalk along the way above the door of inns that stocked good wine or ‘Est, Est’, at inns with particularly good wines. The story goes, that the servant Martino was so enchanted with the wine he discovered in Montefiascone that he noted ‘Est! Est!! Est!!!’. Very fine bouquet, intense & delicate with a dry, pleasant taste. Lively with a zesty lingering finish.

Vinification: Careful zoning has meant the ideal soil is matched to each single vineyard. This has allowed maximum advantage to be taken of the various different soil types; Volcanic soil offers great minerality and sapidity while clayey alluvial soil provides rich body. Pardimiglio enjoys a beneficial diurnal temperature range, contributing to the good health of the vines. Fermentation of the separate grapes in tank. Ageing is carried out in steel tanks on the fine lees for 4 months. The wine is fined in bottle for 3 months before release.

Note: Three generations of the Trappolini family have cultivated land on the ‘Pardimiglio’ Estate. Knowledge of the land, terroir, vineyards and vines has been handed down from father to son, working together daily side by side since 1961.
